Protein-Packed Brownies


Preparation time: 10 mins

Cooking time: 20 mins


Ingredients

  • 1x 400g can black beans, drained and rinsed

  • 2x eggs, medium size

  • 5 tbsp sugar

  • a pinch of salt

  • 2x tsp vanilla essence

  • 1/4 C cocoa powder

  • 1/3 C any types of oil

  • 1/3 C dark chocolate chips

  • 1/3 C walnuts, chopped

Method

  • Preheat oven to 180ºC and line a 20cm square tin with baking paper.

  • Add beans, eggs, sugar, salt, vanilla essence and cocoa powder to a food processor and blend until smooth. Slowly add oil and process a few seconds more.

  • Stir in chocolate chips and walnuts. Pour into prepared tin and bake for 20 mins or until centre is set. Cool for 5 mins before turning out and cutting into small squares.
